The document and publications app was activated on our site without me doing it.

These document and publications menu items appeared by themselves on our Epicenter website and none of us turned them on.

I went to turn them off and noticed that the whole app admin feature has changed and I'm not sure how to disable them. This website is a blog, so we don't need those apps/content types turned on.

I'm assuming that the fix now would be to just remove the two menu items I don't want, but I'd rather just be able to disable/enable any app I wanted for a particular site. And it's unclear what happens with the checkboxes on the new app admin UI which I've made a screenshot of below. I have no idea what will happen if I check them and then hit save.
